eater but that isn't entirely true, you just like to opt for light,
well-balanced meals.
The following recipe would be a good choice for your needs.
Sweetcorn and Chicken Soup
Serves 4
15g (½oz) butter
1 onion, chopped
1 clove garlic, chopped
400g (14oz) can creamed sweetcorn
100g (4oz) can sweetcorn
175g (6oz) cooked chicken, shredded
300ml (½ pint) chicken stock
300ml (½ pint) fresh milk
seasoning to taste
chopped parsley to garnish
- Melt the butter, add the onion & garlic and fry gently
for 5 minutes until soft.
- Add the remaining ingredients and bring to the boil,
simmer gently for 10 minutes.
- Season to taste, garnish with chopped parsley and
serve with wholemeal bread.
