Virgo recipe

Your interest in health and nutrition makes you known as a fussy
eater but that isn't entirely true, you just like to opt for light,
well-balanced meals.

The following recipe would be a good choice for your needs.
Sweetcorn and Chicken Soup
Serves 4

15g (½oz) butter
1 onion, chopped
1 clove garlic, chopped
400g (14oz) can creamed sweetcorn
100g (4oz) can sweetcorn
175g (6oz) cooked chicken, shredded
300ml (½ pint) chicken stock
300ml (½ pint) fresh milk
seasoning to taste
chopped parsley to garnish
  1. Melt the butter, add the onion & garlic and fry gently
    for 5 minutes until soft.
  2. Add the remaining ingredients and bring to the boil,
    simmer gently for 10 minutes.
  3. Season to taste, garnish with chopped parsley and
    serve with wholemeal bread.
