Capricorn recipe

Your love of food includes most types of vegetable, even the ones
other people are not too keen on.

The following recipe is a different way of cooking the greens you love.
Brussels Sprouts in Tomato
Serves 4

675g (l½lbs) Brussels sprouts,
trimmed, washed and a cross cut in
the core
25g (1oz) butter
1 clove garlic, chopped
1 onion, chopped
1 green pepper, cored, de-seeded
and chopped
400g (14oz) can chopped tomatoes
Salt and pepper to taste
  1. Heat the butter in a saucepan over a moderate heat
    and fry the onion, garlic and green pepper for 5-10
    minutes until soft.
  2. Add the rest of the ingredients, taste and add more
    seasoning if necessary.
  3. Reduce the heat to low, cover and simmer for 20-25
    minutes until the sprouts are tender.
