Aquarius recipe
Your love of everything unusual also includes food and you are more
likely to experiment with recipes than most of the other signs.
The following recipe is something quite different which you should
enjoy trying.
Tabbouleh (Middle Eastern salad)
Serves 4-6
125g (4oz) bulgar wheat
60ml (4tblsp) chopped parsley
30ml (2tblsp) chopped mint
6 spring onions, chopped
1 green pepper de-seeded and
chopped
45ml (3tblsp) lemon juice
60ml (4tblsp) olive oil
2.5ml (½tsp) ground mixed spice
2.5ml (½tsp) ground cumin
Salt and pepper to taste
1 iceberg lettuce, shredded
3 tomatoes, sliced
12 pitted black olives, halved
- Place the bulgar wheat in a bowl, cover with boiling
water and leave to soak for 1 /2 hours.
- Drain and squeeze out any excess water then and add
the parsley, mint, spring onions and green pepper. Mix
well.
- Place the lemon juice, olive oil, mixed spice, cumin, salt
and pepper in a screw topped jar and shake together.
- Sprinkle over the bulgar wheat mixture and mix lightly.
- Line a plate with the lettuce and place the bulgar
wheat mixture in the centre.
- Garnish with the tomatoes and black olives.
